Summer Steak Kabobs

Ingredients:

1 steak, your choice of the cut (~1 pound)
2 tablespoons reduced-sodium soy sauce
1 teaspoon dark sesame oil
4 cloves garlic, minced
18 cherry tomatoes
2 cups small portabella mushroom caps
2 red peppers, chopped in 1” squares
Pineapple chunks (optional)

Instructions:

  1. Cut beef crosswise into 18 (1/8 inch thick) slices. Place in large resealable plastic food storage bag. Combine soy sauce, oil and garlic into bag with the beef. Seal bag and turn to coat. Marinate in refrigerator at least 30 minutes or up to 2 hours.
  2. Soak 18 (6-inch) wooden skewers in water 20 minutes.
  3. Preheat broiler. Remove beef and discard marinade. Weave beef accordion-style onto skewers with veggies and fruit. Place on rack of broiler pan.
  4. Broil 2-3 minutes. Turn skewers over and broil 2-3 minutes more or until beef is barely pink; or how you like it.
